Mithai and Sweet Shops: Managing Diwali Pre-Orders, Batches and Wastage

For sweet shops, Diwali is a production problem as much as a sales one. How to take pre-orders, plan batches from them, price gift boxes and keep wastage of short-shelf-life sweets low.
In a sweet shop, Diwali success is decided in the kitchen. Make too little and customers go elsewhere; make too much and short-shelf-life sweets go to waste. The shops that handle it best take pre-orders early, plan production from them, and price gift boxes from real costs.
Start pre-orders three weeks before Diwali
Diwali is on 8 November 2026, so open pre-orders by about 18 October:
- A simple order form, on paper, WhatsApp or in your billing system, with name, phone, items, quantity, pickup or delivery date and time slot
- An advance on every pre-order, even a small one. It cuts no-shows sharply.
- Pickup slots (for example, 7 November, 4–6 pm) to spread the rush
Turn orders into a production plan
Every evening, total pre-orders by sweet and by day. Add an estimate for walk-in sales based on last year. That gives the kitchen a daily batch plan.
| Sweet | Pre-ordered (kg) | Expected walk-in (kg) | Plan to make (kg) | Shelf life |
|---|
| Kaju katli | 120 | 80 | 200 | Longer |
| Milk-based sweets | 60 | 70 | 130 | Short: make daily |
| Dry-fruit boxes | 90 boxes | 60 boxes | 150 boxes | Longer |
The figures above are an illustration. Make longer-life sweets earlier and milk-based sweets close to the day.
Price gift boxes from real costs
A gift box price must cover more than the sweets:
- Sweets by weight
- Box, butter paper, ribbon and branding
- Labour for packing (it is slow)
- Wastage allowance
- Delivery for corporate orders
Many shops price boxes on sweet cost alone and lose money on every corporate order.
Keep wastage low
- Make short-life sweets in smaller, more frequent batches during the festive week.
- Watch hourly sales on the main days and adjust the next batch.
- Plan for leftovers: a fair evening offer on the last day is better than waste.
- Display best-before information as required by FSSAI for your products, and train staff to rotate stock.
Billing on the busiest days
- Create gift boxes and combos as single items with fixed prices.
- Use a weighing scale connected to billing, or at least price-per-kg items, to avoid manual calculation.
- Keep a separate counter for pre-order pickups. Customers with advances should not queue with walk-ins.
