For bakeries and cafés, the last two weeks of December bring plum cake orders, custom cakes, office parties and New Year's Eve crowds. The constraint is rarely demand; it is oven space, staff hours and order chaos. Planning capacity before the orders arrive keeps quality up and promises realistic.
Know your real capacity
Work out how many kilograms of cake (or how many custom cakes) you can bake, cool, decorate and pack per day with your ovens and staff. Then set a daily order limit for 22–25 and 30–31 December. When a day is full, offer the next available day.
Set order cut-offs and advances
- Custom cakes: order at least 3–5 days ahead; no new custom orders after a set date before Christmas.
- Plum cakes and standard items: pre-orders with pickup slots.
- Advance: 50% for custom cakes is common; full payment for small standard orders.
- Send a written confirmation with the order number, pickup date and slot.
